When you need a quick and easy midweek supper, Chicken and Chips is always a hit. Using the air fryer is a healthier and quicker option, especially if you have a 2-drawer version.

If f you're looking for midweek meals that are easy, quick and nutritious, Air Fryer Chicken and Chips is a winner. Air-fried chips are a revelation - only a splash of oil, and a touch of spice. Add a quick salad and you're ready in 30 minutes.

Ingredients

- Potatoes - use your favourite variety. Mine are King Edwards, tried and trusted for chips and roast potatoes.
- Chicken breasts - I've used skinless, but you could leave it on
- Potato Spice - a mixture of smoked sweet paprika, salt, and garlic granules

Instructions

- Scrub the potatoes and pat dry, no need to peel. Cut into thin, but not skinny chips, easiest with a chip cutter

- Mix the potato spices and oil with the chips, ensuring they are all coated with oil. Cook for 24 minutes at 190°C

- Coat the chicken breasts in oil and season with salt and pepper. Cook for 20 minutes at 180°C

- Dish up and enjoy. Just add salad and your favourite sauce. (Mine's mayonnaise)
Top tip: Cut your chips with a knife, in the food processor, or, my personal favourite, a chip cutter. This nifty bit of kit makes even-sized chips in seconds.
Variations
- Spicy - add some spice to the chicken breasts with a teaspoon of Garam Masala or Gyros spice mix
- Deluxe - make a flavoured mayonnaise as an accompaniment
- Kid-friendly - reduce the garlic and salt, and add a little onion powder instead

Air Fryers
Air fryers cook food quickly and evenly by blasting hot air all around it. They use a combination of a fan and a heating element to give the food a crispy outside, much like frying, but without needing much oil. Because hot air keeps moving around the food, air fryers are especially good at giving foods a golden, crunchy texture.
Air fryers have become popular because they make cooking faster and easier for families with little time to cook. Many recipes are done in half the time they would be in a regular oven. Plus, they use less energy than a big oven and are easier to clean.
One drawer or two?
I'm a bit late to the air fryer party, but I love both of mine. If I were buying my first one now, I'd buy a 2-drawer tower. The footprint is the same as my single one, but it cooks 2 or 3 times as much. Put the raw food in the drawers, set and synchronise the cooking times and you're done.

Ingredients
- 4 chicken breasts
- 1 tablespoon olive oil
- salt and pepper
For the chips
- 4 potatoes, see note
- 2 tablespoons oil
- 1 teaspoon salt
- ½ teaspoon garlic granules
- ½ teaspoon sweet smoked paprika

Prep the chicken
- Put the chicken in a dish and add the oil and seasoning. Use your hands to ensure the chicken is completely coated4 chicken breasts, 1 tablespoon olive oil, salt and pepper
- Arrange the chicken in a single layer on the air fryer grid in one drawer
Prep the chips
- Scrub the potatoes; there's no need to peel them. Cut into thin, but not skinny chips. I use a chip cutter for speed and consistency4 potatoes,
- Combine the oil and seasonings in a large dish. Add the potatoes and mix to ensure they're coated and put them in the second air fryer drawer
Cooking chicken and chips
- Set the chips to cook at 190°C for 24 minutes.Set the chicken to cook at 180°C for 20 minutes.Set the SYNC button if your air fryer has one, to ensure your Chicken and Chips are ready together
- Turn the chicken after 10 minutes and shake the chips.Check the chicken is cooked by piercing with a knife in the thickest part to see the juices run clear, or use a meat thermometer to check it's reached 74°C
- Serve with salad, or some microwaved broccoli, and sauces

Ingredients:
- Use the number of potatoes you would normally cook for your family
Food safety
- Cook to a minimum temperature of 74°C (165°F)
- Do not use the same utensils on cooked food, that previously touched raw meat
- Wash hands after touching raw meat
