Slow Cooker Sausage Casserole

One-step Slow Cooker Sausage Casserole is a ‘chuck it in and leave it to cook all day’ recipe.

Ingredients

  • 300-500 g new potatoes
  • 8-12 thick sausages, pork, beef, chicken, or vegetarian (see Note)
  • 1 x 400g can chopped tomatoes
  • 1 x 400g can baked beans
  • 1 tablespoon Worcester Sauce (15ml)
  • 2 teaspoons dried mixed herbs (10ml)
  • 50 ml red wine or stock
  • 50 ml hot water

Instructions

  • Slice the potatoes thinly (approx. ½ cm)
  • Cut each sausage into 3 pieces and put in the bottom of the Slow Cooker
  • Empty the tins of tomatoes and beans, with the Worcester Sauce, herbs, wine or stock, and hot water into a bowl and mix thoroughly
  • Pour about a quarter of the sauce over the sausages
  • Add the potatoes and  the remaining sauce in two batches and stir to ensure all the potatoes are covered
  • Cook for 5-6 hours on HIGH or 8-10 hours on LOW

Notes

If you use vegetarian sausages you might want to brown them for a better texture.
