Ingredients
250mlboiling water
1strawberry jelly,1-pint size
350gripe strawberries
300mldouble cream
400gcan condensed milk

Instructions
Preparation:
Boil the kettle
250 ml boiling water
Tear or snip the jelly into cubes
1 strawberry jelly,
For the mousse:
Put the jelly cubes in the processor. Add 250ml boiling water and let it stand for 2 minutes to start dissolving. Add the strawberries and blitz until smooth - about 2 minutesCAUTION: pulse first to avoid the liquid going everywhere!
250 ml boiling water, 1 strawberry jelly,, 350 g ripe strawberries
Put the mixture in the fridge (in the processor if it fits). Chill until just beginning to thicken - 1-1½ hoursThe strawberries may separate from the jelly at this point.
Remove the mixture from the fridge and put back in the processor (if it isn't already). Add the cream and condensed milk. Blitz until smooth - about 30 sec
300 ml double cream, 400 g can condensed milk
Pour the mousse into a serving bowl. Chill overnight until set
Decorate with strawberry slices before serving.
Notes
Everyday Cooks tip:
To speed up the chilling time, add less boiling water to the jelly initially and top up with cold water once the jelly has melted. Try 200ml boiling water and 50ml cold water.
