Date and Walnut Loaf

Quick and easy, all-in-one fruit loaf. It's a cross between a scone and a cake, just the thing if you have no eggs. Delicious with butter or without.

Ingredients

  • 150 g butter, at room temperature
  • 300 g plain/all-purpose flour
  • 150 g dates, stoned and chopped
  • 75 g walnuts, roughly chopped
  • 150 g raisins
  • 150 g Demerara sugar
  • 1 teaspoon baking powder (5ml)
  • 1 teaspoon bicarbonate of soda (5ml)
  • 175 ml milk
  • Pinch of salt

Instructions

  • Preheat the oven to 180°C/ 160°C fan/ gas mark 4/ 350°F
  • Grease the tin or pop the liner in
  • Beat all the ingredients together until well combined.
    If using a processor, blitz everything except the fruit and nuts. Stir these in afterwards
  • Spoon the mixture into the tin
  • Cook for 50-60 minutes until well risen and just firm to the touch. Test after 50 minutes and leave longer if necessary.
    Leave in the tin until cool - or eat warm.
