Pan-fried Lemon and Garlic Salmon with Asparagus

Ingredients

  • 120 g fine asparagus
  • ½ lemon
  • 1 clove garlic
  • 10 g butter
  • 2 teaspoons olive oil (10ml)
  • 2 salmon fillets, 100-125g each

Preparation:

  • Rinse the asparagus under the cold tap and pat dry with kitchen paper. Trim the ends
  • Juice the lemon
  • Peel and crush, or very finely chop, the garlic

To cook the Lemon and Garlic Salmon:

  • Heat oil and butter in a large frying pan on a MEDIUM heat
  • When hot, add the salmon fillets and asparagus. Cook for 4-5 minutes
  • Turn the salmon and the asparagus. Cook for a further 3-4 minutes
  • Add the garlic and lemon juice. Cook for 2 minutes
  • Season to taste and serve immediately.
