Banana Pancakes

Speedy banana pancakes are a healthy treat for breakfast

Ingredients

  • 1 large ripe banana, or 2 small bananas
  • 2 medium eggs
  • 2 level tablespoons coconut flour, or wholemeal flour
  • 1 tablespoon milk
  • Butter for frying

Equipment

Medium frying pan

Instructions

  • Mash the banana(s)
    1 large ripe banana,
  • Beat the egg and add to the banana. Mix well
    2 medium eggs
  • Add the flour and milk and mix in well. You want a thick mixture
    2 level tablespoons coconut flour,, 1 tablespoon milk
  • Heat a medium frying pan on MEDIUM heat and add a knob (about a teaspoon) of butter.
    Once it's sizzling add spoonfuls of batter to make 4-6 pancakes.
    Cook for 3-4 minutes on each side until brown and cooked through. Serve.
    Butter for frying

Notes

Variations

Flour

Use any kind of flour for these pancakes. Add a little extra milk to wholemeal flour

Bananas

2 small or 1 very large, but use what you have. The recipe works with more or less banana

Eggs

If you only have large eggs, use more banana and a little more flour
