- 600 g baby new potatoes
- 300 g cherry tomatoes
- 400 g tenderstem broccoli See Note
- 1 lemon
- 4 cod fillets - chunky is best
- 3 sprigs oregano - or use dried herbs
- 2 tablespoons olive oil
Prevent your screen from going dark
For the traybake
Add the oil, potatoes, and herbs to the roasting tin and mix well so that the potatoes are all coated in oil
Season with salt and pepper
Cook for 25 minutes, turning the potatoes once
Blanch the broccoli by cooking it in a large pan of boiling water for 1 minute. Drain and set aside until needed
Arrange the broccoli and tomatoes around the potatoes, ensuring everything is coated in oil. Top with the cod fillets
Squeeze half the lemon wedges over the fish and tuck them all into the vegetables
Return to the oven for 10-15 minutes, until the fish is opaque and the broccoli is tender
