Ingredients

  • 600 g baby new potatoes
  • 300 g cherry tomatoes
  • 400 g tenderstem broccoli See Note
  • 1 lemon
  • 4 cod fillets - chunky is best
  • 3 sprigs oregano - or use dried herbs
  • 2 tablespoons olive oil

Instructions

Preparation

  • Preheat the oven to 220°C/200°C fan, gas mark 7/425°F
  • Wash the vegetables
  • Trim the broccoli
  • Cut the lemon into 6-8 wedges
  • Boil the kettle

For the traybake

  • Add the oil, potatoes, and herbs to the roasting tin and mix well so that the potatoes are all coated in oil
  • Season with salt and pepper
  • Cook for 25 minutes, turning the potatoes once
  • Blanch the broccoli by cooking it in a large pan of boiling water for 1 minute. Drain and set aside until needed
  • Arrange the broccoli and tomatoes around the potatoes, ensuring everything is coated in oil. Top with the cod fillets
  • Squeeze half the lemon wedges over the fish and tuck them all into the vegetables
  • Return to the oven for 10-15 minutes, until the fish is opaque and the broccoli is tender

Notes
