Easy Baked Alaska

Ingredients

  • 2 large egg whites
  • 125 g caster sugar
  • 1 Arctic Roll

  • Lightly oil the baking sheet or cover with a silicone baking mat or magic liner
  • Put the egg whites in a clean bowl. Using electric beaters, whisk on HIGH until dry and the peaks are firm (i.e. they don't droop over)
    Any trace of grease will stop the egg whites whisking up
  • Add one tablespoon of sugar and whisk in. Add the remaining sugar half at a time, whisking well between each addition, to give a smooth, glossy and stiff meringue
  • Put the Arctic Roll on the baking sheet
  • Spread the meringue evenly over the top and sides, making sure there are no gaps at the bottom
  • Freeze for 1 hour
  • Preheat the oven to 220°C/ 200°C fan/ gas mark 7/ 425°F
  • Cook the Baked Alaska for 8-10 minutes, until lightly browned
  • Serve immediately.
