Stained Glass Biscuits

Pretty Stained Glass Biscuits are great for baking with children.

Ingredients

  • 250 g plain/all-purpose flour
  • 1 teaspoon baking powder (5ml)
  • 125 g butter
  • 125 g caster sugar
  • 1 large egg
  • 1 teaspoon vanilla extract (5ml)
  • assorted boiled sweets

Instructions

Preparation:

  • Preheat the oven to 180°C/ 160°C fan/ gas mark 4/ 350°F
  • Line 2 baking sheets with a liner or baking parchment, or grease with butter
  • Put 3-4 sweets of the same colour in a plastic bag and crush with a rolling pin
  • Repeat for all the colours you want to use

For the Stained Glass Biscuits:

  • Put all the ingredients in a large mixing bowl/ processor. Mix well until all the ingredients are combined
    (Flour, baking powder, butter caster sugar, egg vanilla)
  • Tip the dough onto a floured work surface and shape into a ball with your hands. If it feels too soft, put it in the fridge for half an hour
  • Using a floured rolling pin, roll the dough out to about ½ cm thick. Cut out the biscuits and put onto the prepared baking trays
  • Cut out a small star shape from the centre. You can cook the stars as tiny plain biscuits
  • Fill the hole with crushed sweet as carefully as possible, getting some into the points of the star. The sweet will melt to fill the space
  • If you have time, putting the baking trays in the fridge for 20 minutes before cooking helps to keep the biscuit shape, but it really isn't essential. Add an extra 5 minutes to the cooking time
  • Bake for 12-18 minutes, depending on size
  • Cool for a minute or two then turn onto a wire rack until completely cool.

Notes

Storage:
  • The biscuits keep for at least a week in an airtight container
