Ingredients
400gcan chickpeas
200gfeta cheese
½small cucumber
1trimmed celery heart
1red or yellow pepper
12olives,green or black
120mlolive oil
20mlwhite wine vinegar
Salt and pepper

Instructions
For the salad:
Drain, rinse, and dry the chickpeas
400 g can chickpeas
Cut the feta into small cubes - about the size of the chickpeas
200 g feta cheese
Wash and chop the salad vegetables into similar sized pieces
½ small cucumber, 1 trimmed celery heart, 1 red or yellow pepper
Slice the olives into slivers
12 olives,
Mix all the ingredients in a salad bowl
For the dressing:
Put the oil, vinegar and seasoning into a jar with a lid and shake until combined. Pour over the salad and mix gently to make sure that everything is covered.
