Feta and Chickpea Salad

  • 400 g can chickpeas
  • 200 g feta cheese
  • ½ small cucumber
  • 1 trimmed celery heart
  • 1 red or yellow pepper
  • 12 olives, green or black
  • 120 ml olive oil
  • 20 ml white wine vinegar
  • Salt and pepper


For the salad:

  • Drain, rinse, and dry the chickpeas
    400 g can chickpeas
  • Cut the feta into small cubes - about the size of the chickpeas
    200 g feta cheese
  • Wash and chop the salad vegetables into similar sized pieces
    ½ small cucumber, 1 trimmed celery heart, 1 red or yellow pepper
  • Slice the olives into slivers
    12 olives,
  • Mix all the ingredients in a salad bowl

For the dressing:

  • Put the oil, vinegar and seasoning into a jar with a lid and shake until combined. Pour over the salad and mix gently to make sure that everything is covered.
